How can I mention my 3 year gap in SOP?

I have graduated in July 2019 but didn't applied in any university because I haven't received my degree certificate till Jan 2020.

In March pandemic strikes and borders were closed so I dropped the idea now I'm going for feb23 intake will it affect my admission in Australian universities?
(Though I have done 2 internships for 7 months during these 3 years)
