What is the difference between Ms in CS with specialisation as data science and MS in DS itself? Which one to prefer? Also most universities have either one of those 2 so will the SOP be entirely different for both programs even though both are mainly related to data science ?

You need to check the carriculum of both the course which a uni is providing .. and then from there you can pick which subjects would to like to study ..
